I am putting together a imperial stout recipe, and the ABV will not go above 10% even if i put in way way too much fermentables. Is this a fault in the software.
It's a default value for alcohol tolerance. You can menu into Ingredients/yeast, double click on the yeast in question and change the tolerance setting. More of a safety valve for the average homebrewer than a fail.
Look at your yeast choice. BeerSmith uses the published upper limit of the yeast strain as the maximum ABV the beer will be able to reach. You can get around this in the software by increasing the upper limit of the yeast. In real life, you may be able to push the ABV limits the companies publish by pitching a good amount of healthy yeast and promoting good fermentation temperatures. This was done by request of many users.
I have found that, and corrected all the yesat tolerances, spent about 2 hrs going through my old brewing logs...lol
lucky i dont use liquid yeasts , i ll be there for a week.
