I'm new to AG and have 3 batches under my belt with poor efficiency, but they are getting better.  My question is why does beersmith tell me to sparge with 168 degree water?  If I want to mash out at 168 shouldn't the sparge water be closer to 185 to raise the mash to 168???

If you want to Mash Out, You will need to choose a mash profile that includes a mash out or copy an existing and modify it to include a mash out. The Sparge is merely to rinse the grains. It is not intended to be a mash out step.

Cheers
