that is a lot of pils malt,

extend your boil to drive off DMS pre-cursors,  90 min min.

11 gals of 1.060 is at the upper limit for a straight pitch; recommend a starter with at least one pkg, esp. if packages are not very fresh (like 2-3 weeks old). 

Honey malt is super sweet; if not familiar with it, taste a pinch and see what you think. 
 
I have used a lb of honey malt for 10 gallons before and it wasn't cloyingly sweet.  It gave some body to the beer as well. 

It does look like a lot of grain.  Are you sure you are at 63% efficiency?  I am still trying to dial mine in, but I think it is closer to 70-75%.  That will reduce that basemalt.

Also I think I had left out that I will split the batches, one I plan on racking over cherries the other just leaving as is.

I am a malt head, lol, I actually love honey malt.

I agree on the pils, for got about the extended boil time. so, i nixed that one.

unfortunately, 63-65% is about all i get

Please, keep it coming, this is my 3rd all grain batch, so i am open to all suggestion. and i have pretty thick skin!
 
You obviously are not trying to match the style (the orange peel) and I'm not a style nazi (unless you want me to be) so what are you looking to do with this recipe?  That will help us a lot in suggesting anternatives/changes to your recipe.
