Hello, my name is Tony McNelly and I have been brewing for years and years. I have also been using Beersmith for a number of years too.

I'm returning to the forum, and it still looks to be a good resource for info and answers.

Well I do have a question to kick things off.

I planted some Target hops a couple of years back, and this harvest has been bumper. I always use flowers (or plugs) as opposed to pellets as a personal preference, but they are always dried (of course).

Here's my question, can I use these hops straight off the vine, so-to-speak, without drying, or does the drying process actually do something to the oils? I know it gets rid of the water in the flowers, and is neccessary for storage, but do fresh hops make good beer?
