I'm in the planning stages of a 15bbl production brewery and I'm wondering if anyone is using BeerSmith on a professional level?

Yes,
Quite a few do now - in fact Scott Hettig talked about using it on the BeerSmith podcast (#7).

The biggest difference when scaling a small batch up is the higher hop utilization you will get from a large microbrew system vice a small 5-10 gallon batch. You will need less hops for the microbrewery.
