I have my data in Directory "A" but Beersmith on my main PC has the Documents Directory set to Directory "B."  I simply want to tell beersmith2 to use  Directory A, I do not want it to copy the contents of Directory B in there.  How do I do so?

You can't do it at the moment, but obviously a workaround would be to make a complete backup copy of Directory A, then perform the "Change Directory" operation to A, then copy your backup over A again (which would preserve A).
