Maybe a stupid question... How many pounds of grain will fit in a two gallon bucket?  ??? ???
 
I get at least 4 in my 1 gallon bucket. 
 
I think my last brew was 9.5 and the whole grains had a 2 gallon bucket pretty full.

are we talking just grains? Or are you talking about using it as a mini mash tun?

If you want to use it as a min mash tun then we need to account for water.
 
Brewed Last weekend in a 5 gallon mash-tun (round cooler type):

12.75 grains
4 gallons water

result is about 1" down from the brim of the cooler.  That is the absolute max for a 5 gallon cooler and still be able to sorta stir.  I had several dough balls, and it took a while to get rid of them all given how careful I had to be with the mash paddle.

For a 2 gallon that's the equivalent of:

5.1 lbs grain
1.6 gallons water
