How do you create a totally custom fermentation?

I understand how to adjust the variables and create a fermentation schedule from scratch, but how do I create a completely custom fermentation schedule?  Particularly for Lagers.

The default is:
1. Primary
2. Secondary
3. Tertiary
4. Aging

Since I usually follow the same schedule for lagers, how would I mix up the order and/or add steps?
1. Chill wort to X degF
2. Pitch yeast / Primary
3. Tertiary / Diacetyl rest at XX degF
4. Crash to X degF, xfer to secondary
5. Ramp temp from Y degF to Z degF
6. Age at Z degF

I am able to reduce it to the default 4 ranges allowed and essentially be correct, but they are not named what they are actually doing?  I've got secondary and tertiary swapped.  Small detail, but it would be nice to customize for accuracy.
