My recipe calls for all sugars to be added in the last 10 minutes of my boil. The timer defaults them to be added with the rest of the extracts at the beginning of the boil. How do I change this so the timer accurately reflects when they get added?

As a gravity addition, you can't change the timing. You need that for correct calculations.
As a workaround, you can add a note to the Misc ingredient list. Name it something like "Add All Sugars".
Set it up as "Other" with it as one item for a batch, rather than a measurement. Set the boil timing to when you want to add it.
This just becomes a line item in the recipe, that will become an alarm in the timer.
