Sierra Nevada Celebration Ale

Hi,

I was listening to an old broadcast of The Brewing Network's Sunday Session when Steve Dressler from Sierra Nevada was on.  He was kind enough to share the recipe for their Celebration Ale to the listening audience.  The quantities that he proved are for a 100 barrel batch, so a bit of scaling would need to be done for your typical 5 gallon home brew batch.

Here is what he provided:

1.  Only two malts used:  2 row Pale, and Caramel Crystal 60L

2.  The C60 is approx. 11 to 12% of the total grain bill.  Preferably English.

3.  Hops used are Chinook, Centennial, and Cascade.

4.  60 min. hop addition - 25 lbs. Chinook

5.  15 to 10 min. hop addition - 20 lbs Centennial / 40 lbs Cacsade

6. Flameout hop addition - 20 lbs Centennial / 40 lbs Cascade

7. Dry hop with 2:1 ratio of Cascade to Centennial at 1/2 lb per barrel

8.  California Ale Yeast (WPL001)

9.  Pitch yeast at 62F, ferment at 68F

10. OG between 1.060 - 1.065

11.  Single Infusion Mash at 156F
