We talk about the entire all grain mashing process for beer brewing from start to finish. Charlie explains how mashing actually works, how changes in the process affect the finished beer, and the role that multiple step mashing, decoction mashing and lautering play in brewing beer.

Awesome interview... Seems like you have access to the best of the best!
I am nearly finished with his book - Reaching for the Soul of Beer and Brewing. I found it to be light and entertaining, and a little educational.
