I put a wit beer down yesterday and used wlp410 begium wit II ale yeast. I aerated well and used a 1.5 lt starter in 21 lt brew, I have about six inches of foam on top after 12 hours. Is this normal for this yeast I have never had a brew that fermented this aggresively. It's lucky I ferment in 30 lt buckets or I would have a real mess.

Andrew,
If I remember you will get a nice fluffy white head that looks very much like the white head you get when you poor the actual beer. I've always had a nice solid fermentation with this recipe.
They don't call it a Wit (White beer) for nothing.
BTW - Save off some of the yeast - it is easily robust enough to reuse several times.
