I am happy to say my shameless copy of Jamil Z's AC-cooled beer shed now works (see attached). A friend helped me build a simple 4x4x8 box of studs, pink insulation and drywall, lined with foiled foam. The AC had too many energy-efficiency features for this job, and another friend just rewired it. It's currently 97F outside, 86F in the garage, and 55F in the shed. So that is where all my finished beer will now go.
The final trick was putting the temp sensor in water to reduce the sensitivity to air temp changes.
I may hide inside after cutting the grass and drink a beer.
