Recipe size conversion

I'm a new brewer starting out on batch #3. Right now just doing extract brewing - a 3 gal boil and topping off to 5gal.  I'm finding a lot of recipes for full boils (7 gal) -- are there some rules of thumb to convert them down to my boil size ?

Can BeerSmith do this ?  I'm confused ???

Hi,
  Use the "Scale" command that's on the second toolbar (also on to actions menu).  It lets you scale to different batch sizes or ideally to your own equipment profile.

Am I able to brew less than 5 gallon each time? I would prefer to have variety rather than quantity.

Yes, you can resize to a smaller size as well.  Simply dedcide what size batch you want and use the, "Scale" feature.
