Splitting Starter

Can you split a 1000 ML starter into two 5 gallon batches?  Or will you be under pitching?

Personally, I think you'd be underpitching. A 1-liter starter is the minimum you should use for a 5-gallon batch, 2 liters is better, 3 is great! But, splitting a 1-liter starter into two 5-gallon batches is asking for trouble, as far as I'm concerned.

Why not just create two one liter starters from a single one?  All it takes is a little more wort and a day or two.

Cheers!
