Hello everyone,
I'm gearing up to brew a batch of Gueuze, but don't have any aged hops for the boil and I don't want to wait a year. Any thoughts on alternatives? I know it's not quite the same, but I'm toying with using a hopback for a different batch the same day, then using the spent hops (likely Saaz) in the Gueuze. Since I have to wait a year+ for this, I want to do things as well as possible, e.g. turbid mash, oak barrel etc. Any and all input welcome.
