I just recieved and installed two fermentap weldless thermometers. I noticed they are 8 degrees off from each other. Anyone ever adjust one of these?

The nut on the back is used to adjust it. Hold the face and turn the nut with a adjustable wrench.

I found that calibrating it on the cold end works better to my system as I cared more about the chilling temps. Mine seems spot on on the low end and about 3F off on the host end.
