I brewed a La Fin DuMon but when we pour a glass is 3/4 foam - what did I do wrong?

If you kegged it, the pressure could be too high or your beer hose to the faucet too short (or a combination of both.  Use Beersmith to find you beer's proper carbonation level/temprature and then set your CO2 accordingly. Your beer hose should be at least about 6 ft so the pressure drops gradually from keg to glass.

If you bottled, you put too much priming sugar in it or are serving it too warm.
