- This week I welcome back Mitch Steele. Mitch is the COO and Brewmaster at New Realm Brewing and a former Brewmaster at Stone. Mitch wrote the book on IPAs called: IPA Brewing Techniques, Recipes and the Evolution of India Pale Ale. (Note: Amazon Affiliate Link).
- We start with a discussion of some of the new things happening at New Realm brewing.
- Mitch tells us about his foray into non-alcoholic beer which he is brewing using a vacuum-distillation method.
- We discuss some of the challenges as well as what drove him to pursue non-alcoholic beer.
- Mitch explains the large number of supply chain and inflation issues putting pressure on small breweries and making it difficult to maintain steady production. Particularly hard hit is European supplied malts.
- We talk about the impact inflation, COVID and the supply chain have had on Craft brewing.
- We switch topics to talking about new yeast strains. Mitch tells us about his experiences with yeasts that are modified to enhance thiols and promote fruity IPA flavors.
