- Today on the show I welcome back Stan Hieronymus. Stan is an expert on hops and author of the books For the Love of Hops, Brew Like a Monk, Brewing Local and Brewing with Wheat (Amazon affiliate links). He is also a certified BJCP beer judge and author of dozens of periodicals on brewing.
- We open the show with a discussion about hop thiols and how we are still learning new things about thiols in beer. Stan attended quite a few presentations at the World Beer Congress where they discussed the importance of thiols and their interaction with other compounds in brewing.
- Stan mentioned the thiol list of high impact, medium impact and low impact hops for 90 varieties. He has the list in his newsletter here.
- Stan also provides his short list of high thiol hops to use including Citra, Mosaic, Equinoc, Nelson Sauvin, Galaxy and Nectaron.
- We talk about how a homebrewer might exploit high thiol hops along with thiol enhancing yeast and additives to add more fruity aroma and flavor to their IPAs. We also talk about what can happen if you overdo it!
- We discuss new hop products including the new Abstrax hop oils. These are interesting as they can be added “to taste” at bottling or even in the glass and they are also made from a unique extract process.
- Stan goes into detail on some of the new emerging hops including Krush, Peacherine, Manuta, MacKenzie, Alora and Helios.
- We talk about changes to the overall hop market including the current “oversupply” of some hops that is bringing prices down temporarily for some varieties.
